Gourmet Briar Patch Tea Room
I love the Tea Room. It is such a relaxing and enjoyable place to visit. On one of my visits you served a sweet potato soup that was wonderful. May I please get the recipe from you.

Glad you liked the soup. Here is how I make it:
Sweet Potato Soup
2 Tbsp olive oil, 1 tsp ginger
3 stalks celery, chopped about 1 cup
2 cps chopped onion
2 Tbsp curry powder, 1 tsp cinnamon
2 #3 cans of drained sweet potatoes cubed
8 cups of chicken stock
1/2 tsp thyme
2 small bay leaves, 3/4 tsp salt
1/2 tsp pepper, 1/2 cup half and half
1/2 cup sugar, and 1 cup raisins
Using stock pot heat olive oil and then add the ginger, celery, and onion cooking until soft. Add curry, cinnamon and cook 1 minute stirring constantly. Stir in sweet potatoes, broth thyme, bay leaves and salt and pepper. Increase your heat till it comes to a boil. Lower the heat and simmer 25 minutes..I remove the bay leaves and use my stick blender to puree. I then add the half and half and raisins.
Serve with a dollop of plain yogurt and peanuts.
