I love the Tea Room. It is such a relaxing and enjoyable place to visit. On one of my visits you served a sweet potato soup that was wonderful. May I please get the recipe from you.
Glad you liked the soup. Here is how I make it:<BR> Sweet Potato Soup<BR> 2 Tbsp olive oil, 1 tsp ginger<BR> 3 stalks celery, chopped about 1 cup<BR> 2 cps chopped onion<BR> 2 Tbsp curry powder, 1 tsp cinnamon<BR> 2 #3 cans of drained sweet potatoes cubed<BR> 8 cups of chicken stock<BR> 1/2 tsp thyme<BR> 2 small bay leaves, 3/4 tsp salt<BR> 1/2 tsp pepper, 1/2 cup half and half<BR> 1/2 cup sugar, and 1 cup raisins<BR> <BR> Using stock pot heat olive oil and then add the ginger, celery, and onion cooking until soft. Add curry, cinnamon and cook 1 minute stirring constantly. Stir in sweet potatoes, broth thyme, bay leaves and salt and pepper. Increase your heat till it comes to a boil. Lower the heat and simmer 25 minutes..I remove the bay leaves and use my stick blender to puree. I then add the half and half and raisins.<BR> <BR> Serve with a dollop of plain yogurt and peanuts.
